Sweet Cashew Stir-fry (Vegan)

  1. Mix all sauce ingredients together with a whisk.
  2. Set aside.
  3. Fry tofu bits and oil in a large pan.
  4. When tofu is browned on all sides, add flour and mix to coat.
  5. Add onion, garlic and ginger; fry until onion is translucent.
  6. Add peppers and carrots for about 3 minutes.
  7. Add snow peas and cook for 1 minute.
  8. Add sauce and stir to coat.
  9. Allow sauce mixture to thicken (takes about 3 minutes).
  10. Add cashews, and stir to coat.
  11. Serve with rice, garnish with sesame seeds.
  12. Enjoy!
