Sweet Cashew Stir-fry (Vegan)
- 1/2 cups Ketchup
- 2 Tablespoons Soy Sauce
- 1/2 teaspoons Salt
- 3 Tablespoons Brown Sugar
- 2 teaspoons Sesame Oil
- 1/4 teaspoons Cayenne Pepper
- 1/4 cups Vegetable Broth
- 1/2 cups Orange Juice
- 1 package (12 To 14 Oz. Package) Tofu, Diced
- 2 Tablespoons Oil
- 2 Tablespoons Flour, Or Arrowroot Powder
- 1 whole Onion, Chopped
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Minced Fresh Ginger
- 2 whole Pepper (any Color), Chopped
- 2 whole Carrots, Chopped
- 2 cups Snow Peas
- 1 cup Cashews
- Mix all sauce ingredients together with a whisk.
- Set aside.
- Fry tofu bits and oil in a large pan.
- When tofu is browned on all sides, add flour and mix to coat.
- Add onion, garlic and ginger; fry until onion is translucent.
- Add peppers and carrots for about 3 minutes.
- Add snow peas and cook for 1 minute.
- Add sauce and stir to coat.
- Allow sauce mixture to thicken (takes about 3 minutes).
- Add cashews, and stir to coat.
- Serve with rice, garnish with sesame seeds.
- Enjoy!
