Boiling Bacon With Redcurrant Glaze Recipe
- 1 kg boiling bacon Water
- 1 x bay leaf
- 4 x peppercorns
- 1/2 c. redcurrant jelly
- 2 Tbsp. mild prepared mustard
- 2 Tbsp. brown sugar
- 1 x clove garlic
- Bacon:Place boiling bacon in a large saucepan.
- Cover with water, bay leaf and peppercorns.
- Bring to the boil, reduce heat and simmer for 1 hour.
- Remove to a heatproof platter.
- Remove skin from top of bacon and spread with Redcurrant Glaze.
- Grill till top is bubbling.
- Stand 10 min before carving.
- Redcurrant Glaze:Mix redcurrant jelly, mustard and brown sugar together.
- Crush garlic, peel and chop finely.
- Add in to jelly mix and combine well.
