Boiling Bacon With Redcurrant Glaze Recipe

  1. Bacon:Place boiling bacon in a large saucepan.
  2. Cover with water, bay leaf and peppercorns.
  3. Bring to the boil, reduce heat and simmer for 1 hour.
  4. Remove to a heatproof platter.
  5. Remove skin from top of bacon and spread with Redcurrant Glaze.
  6. Grill till top is bubbling.
  7. Stand 10 min before carving.
  8. Redcurrant Glaze:Mix redcurrant jelly, mustard and brown sugar together.
  9. Crush garlic, peel and chop finely.
  10. Add in to jelly mix and combine well.
