Dorito Beef Casserole
- 1 pound Ground Beef
- 1/4 cups Diced Onion
- 1 clove Garlic, Pressed
- 15 ounces, weight Canned Chili Beans In Sauce
- 1 pinch Chili Powder (optional)
- 10 ounces, weight Canned Ro-tel Diced Tomatoes And Green Chilies (drain Off Most Of The Liquid But Some Is OK)
- 10 ounces, weight Canned Cream Of Chicken Soup
- 16 ounces, weight Bag Of Doritos, Spicy Nacho
- 2 cups Shredded Mexican Cheese
- Preheat oven to 350 F.
- In a large skillet over medium heat, brown beef with onion and garlic.
- Drain off any excess grease before stirring in beans and chili powder, if using.
- In a small bowl, stir together Rotel and cream of chicken soup.
- Crush your unopened back of Doritos.
- Open the bag and dump half on the bottom of a 9x13 casserole dish.
- Layer half of the beef and bean mixture over that then layer on half the soup mixture and 1 cup of Mexican cheese.
- Next, layer remaining beef and bean mixture, remaining soup mixture, 1 cup of cheese and the rest of the Dorito crumbs.
- Bake for 30-35 minutes until hot all the way through.
