Winter Melon & Chicken Simmer, to Enjoy the Taste of Chicken

  1. Cut the winter melon into bite-sized pieces and drain in hot water.
  2. (This will help remove any astringency from them).
  3. Cut the chicken into small bite-sized pieces, sprinkle salt and sake (not listed), and rub into the meat.
  4. Put the chicken in a pot and heat.
  5. Once they've browned, put the winter melon.
  6. Add water, sake, and mirin and boil.
  7. Once it's come to a boil, add salt and dashi soy sauce.
  8. Continue boiling and once the winter melon has reached your desired hardness, it's complete.
