Winter Melon & Chicken Simmer, to Enjoy the Taste of Chicken
- 1 thigh Chicken thigh meat
- 1/4 Winter melon
- 400 ml Water
- 2 tbsp Sake
- 2 tbsp Mirin
- 1 tsp Salt
- 1 tbsp Dashi soy sauce (soy sauce premixed with dashi)
- Cut the winter melon into bite-sized pieces and drain in hot water.
- (This will help remove any astringency from them).
- Cut the chicken into small bite-sized pieces, sprinkle salt and sake (not listed), and rub into the meat.
- Put the chicken in a pot and heat.
- Once they've browned, put the winter melon.
- Add water, sake, and mirin and boil.
- Once it's come to a boil, add salt and dashi soy sauce.
- Continue boiling and once the winter melon has reached your desired hardness, it's complete.
