Masala Baked Eggs
- 1 Tbsp. oil
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 1/2 tsp. cumin seed
- 3 plum tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 1/2 tsp. garam masala
- 1/2 tsp. ground coriander
- 1/2 tsp. ground turmeric
- 1/2 tsp. red chili powder or cayenne pepper
- 1/2 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper, divided
- 3 Tbsp. chopped fresh coriander (cilantro), divided
- 4 eggs
- Heat oven to 350 degrees F.
- Heat oil in large skillet on medium-high heat.
- Add next 3 ingredients; cook and stir 5 min.
- or until onions are lightly browned.
- Stir in tomatoes and seasonings; cook 5 min.
- or until tomatoes are softened, stirring frequently.
- Remove from heat.
- Stir in 1/4 cup feta and 2 Tbsp.
- fresh coriander.
- Spread onto bottom of 1.5-L casserole dish.
- Use back of spoon to make 4 (2-inch-wide) depressions in tomato mixture.
- Break egg into each depression.
- Top casserole with remaining feta.
- Bake 20 min.
- or until egg whites are completely set and yolks begin to thicken but do not become firm.
- Sprinkle with remaining fresh coriander.
