Mom's Easy Beef Soup
- 1 (15 ounce) bag frozen mixed vegetables (potatoes, corn, tomato's, okra and green bean mix)
- 1 lb stew meat (browned) or 1 lb ground meat (browned)
- 3 cups water
- 15 ounces whole canned tomatoes (chopped retaining juices)
- salt and pepper
- Bring water, vegetables, and can of tomatoes with juices to a boil, add salt and pepper.
- Cook for approximately 15 minutes.
- Add beef now (if using ground meat be sure to brown and drain before using) and cook another 15 minutes or until vegetables reach desired consistency.
- I serve this with a pan of cheese jalapeno cornbread.
- Would be good with rice.
