Prosciutto-wrapped Grilled Scallops
- 10 paper-thin slices of prosciutto
- 10 sea scallops
- 1 tablespoon olive oil
- 2 tablespoons Essence, recipe follows
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Preheat the grill.
- Season each scallop with olive oil and Essence.
- Grill each scallop for 2 to 3 minutes on each side.
- Remove from the grill and allow to cool.
- Wrap the sides of each scallop with the prosciutto.
- Combine all ingredients thoroughly.
- Yield: 2/3 cup
