Pasta with Fresh Red Peppers Recipe

  2. Combine red pepper and wine, or water, in a saucepan; bring to a boil.
  3. Cover, reduce heat and simmer 3 minutes.

  5. Stir in beans and next 4 ingredients; bring to a boil.
  6. Cover, reduce heat and simmer 10 minutes.
  7. Uncover and simmer 20 minutes, stirring occasionally.

  9. Meanwhile, cook pasta according to package directions, omitting salt and fat.
  10. Drain well.
  11. 4.Place pasta on individual serving plates.
  12. Top with pepper mixture, cheese and pine nuts.
  13. Garnish with basil sprigs, if desired.
  14. Any leftover vegetables will serve nicely in this dish, just add them at the last of the cooking to warm.
  15. If one must have meat, a prepared chicken breast cut into pieces will serve well.
