Butterballs Recipe
- 8 Tbsp. (1 stick) sweet butter, softened
- 3 Tbsp. Honey
- 1 c. Flour AB ts salt
- 1 Tbsp. Vanilla
- 1 c. Shelled pecans, minced moderately fine
- 3/4 c. Confectioners' sugar
- Preheat oven to 300 F. Grease one or possibly two cookie sheets.
- Cream butter.
- Beat in honey; gradually fold in flour and salt, then vanilla.
- Add in pecans.
- Wrap dough in plastic wrap and refrigeratefor 1 hour.
- Form balls by hand, the size of quarters.
- Place 2 inches apart on the prepared cookie sheets.
- Bake for 35 to 40 min.
- Remove from oven as soon as cold sufficient to touch, roll in confectioners' sugar.
- Allow to cold and roll again in sugar.
