Apple Cinnamon Whole Wheat Muffins
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 12 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 12 teaspoon salt
- 2 cups shredded apples
- 12 cup shredded carrot
- 12 cup raisins
- 12 cup shredded coconut
- 12 cup chopped walnuts
- 14 cup oil
- 14 cup unsweetened applesauce
- 14 cup milk
- 2 teaspoons vanilla extract
- 2 eggs
- Heat oven to 350 degrees.
- Line 12 muffin cups or spray with nonstick spray.
- Combine flours, sugar, baking soda, cinnamon, and salt in a bowl.
- Add apples, carrots, raisins, walnuts and coconut, and mix well.
- Add oil, milk, vanilla, and eggs.
- Stir just until combined!
- Fill muffin cups 3/4 full.
- Bake 20-25 minutes or until they test done.
