Rachel Allen's apple and raisin honey squares recipe

  1. Preheat the oven to 180C/Gas mark 4.
  2. Grease and line a 23cm (9 inch) square cake tin.
  3. In a bowl, mix together the flour, oats and bicarbonate of soda.
  4. Place a saucepan on a medium-low heat, add the Kerrygold butter, sugar and honey and stir together for a few minutes until melted and dissolved.
  5. Take care that the mixture doesn't get too hot.
  6. Remove saucepan from the heat and pour the melted ingredients into the flour and oat mixture, stirring well to combine.
  7. Spoon half the mixture into the prepared tin and level the surface.
  8. Mix together the apples and raisins, then sprinkle evenly over the mixture in the tin.
  9. Spread the remaining oat mixture on top.
  10. Place in the oven and bake for about 30 minutes until golden, then leave to cool for 10-15 minutes before cutting into squares and placing on a wire rack to cool completely.
