Rachel Allen's apple and raisin honey squares recipe
- 225 g (7.9oz) self-raising flour
- 225 g (7.9oz) rolled oats
- 1 tsp bicarbonate of soda
- 225 g (7.9oz) butter
- 225 g (7.9oz) caster sugar
- 2 tbsp clear honey
- 2 dessert apples, peeled, cored and finely chopped
- 110 g (3.9oz) raisins
- Preheat the oven to 180C/Gas mark 4.
- Grease and line a 23cm (9 inch) square cake tin.
- In a bowl, mix together the flour, oats and bicarbonate of soda.
- Place a saucepan on a medium-low heat, add the Kerrygold butter, sugar and honey and stir together for a few minutes until melted and dissolved.
- Take care that the mixture doesn't get too hot.
- Remove saucepan from the heat and pour the melted ingredients into the flour and oat mixture, stirring well to combine.
- Spoon half the mixture into the prepared tin and level the surface.
- Mix together the apples and raisins, then sprinkle evenly over the mixture in the tin.
- Spread the remaining oat mixture on top.
- Place in the oven and bake for about 30 minutes until golden, then leave to cool for 10-15 minutes before cutting into squares and placing on a wire rack to cool completely.
