Red Cabbage Slaw
- 1/4 cup light mayonnaise
- 2 tablespoons white-wine vinegar
- 2 teaspoons sugar
- Coarse salt and ground pepper
- 1/2 small head red cabbage, quartered, cored, and shredded
- 2 tablespoons finely chopped fresh cilantro
- In a large bowl, whisk together mayonnaise, vinegar, and sugar; season with salt and pepper.
- Add cabbage and toss to coat with dressing.
- Cover and refrigerate at least 1 hour (or up to 1 day).
- Just before serving, stir in cilantro; season with more salt and pepper.
