Chicken Salad Sandwich Melt
- 1 pound Chicken Tenderloins
- 1/2 whole Onion, Chopped
- 3/4 cups Light Mayonnaise
- 4 Tablespoons Sweet Relish
- 1/2 teaspoons Italian Seasoning
- 6 whole Sub Rolls
- 1 cup Shredded Cheese
- 1 dash Salt
- 1/2 dashes Pepper
- 2 Tablespoons Olive Oil
- Preheat oven to 450F.
- Drizzle some oil in a skillet and preheat over medium-high heat.
- Season chicken with salt and pepper chicken; saute until browned on both sides and done all the way through, about 3 to 4 minutes on each side.
- Tenderloins dont take long to cook.
- Add chopped onions when chicken is close to being done and saute.
- When chicken is done, chop into bite-sized pieces or shred.
- Add chicken to a large bowl.
- Add mayo, relish, seasoning, and salt and pepper to taste.
- Mix all together.
- Lay buns open on a baking sheet.
- Scoop some chicken mixture onto a bun and top with shredded cheese.
- Place in the oven for about 5 minutes to melt the cheese and brown the edges of the bread.
- Serve on plate with tater tots!
