Molded Fruit And Cream Salad Recipe
- 1 (11 ounce.) can mandarin orange sections
- 1/2 c. sugar
- 1 env. unflavored gelatin
- 1/2 c. orange juice
- 1/4 c. lemon juice
- 2 beaten Large eggs
- 1 c. dairy lowfat sour cream
- 1 (3 ounce.) pkg. cream cheese, softened
- 1 med. banana, sliced
- 1/3 c. minced walnuts
- Whole strawberries
- Drain orange sections, reserving syrup.
- Add in water to syrup to make 3/4 c..
- In saucepan, combine gelatin with syrup mix and orange and lemon juice.
- Heat till gelatin dissolves.
- Gradually stir half of warm mix into Large eggs; return all to saucepan.
- Cook two min more.
- Remove from heat.
- Add in lowfat sour cream, cream cheese, beat till smooth.
- Refrigeratetill partially set.
- Mix in orange sections, banana and nuts.
- Turn into 5 1/2 c. ring mold.
- Chill.
- Unmold and add in strawberries in center.
