Lavender-Chamomile Spritzer

  1. Fill a tall glass with ice.
  2. Add the tea syrup, gin and lemon juice.
  3. Stir with a cocktail spoon.
  4. Top off with the vanilla bean soda.
  5. Serve garnished with a lavender sprig if desired.
  6. Combine the tea, sugar and 1 cup water in a small saucepan.
  7. Place over medium heat and cook, stirring often, until the mixture comes to a boil and the sugar is dissolved.
  8. Reduce the heat to low and simmer for 5 minutes.
  9. Turn off the heat and allow the tea to steep for 5 minutes.
  10. Strain through a fine-mesh strainer.
  11. Let cool completely before using.
