African Chicken Recipe

  1. First, marinate the chicken.
  2. Mix together the garlic, chilli and oil and brucsh over the entire surface of the chicken.
  3. Set aside and marinate for 2 - 6 hrs.
  4. Meanwhile, make the African sauce.
  5. Heat the peanut oil and add in the shallots, chopped garlic and chopped chillies and saute/fry gently.
  6. Add in the tomato paste and paprika and continue to cook for about 3 min.
  7. Cold slightly then add in the coconut, peanut butter and water.
  8. Stir well and blend in a food processor till smooth then set aside.
  9. Once the chicken has marinated, transfer it to a roasting pan with the potatoes then brush the chicken and potatoes with a little of the African sauce.
  10. Bake the chicken in a preheated oven at 230 c. for 35 min.
  11. Pour the remaining African chicken sauce and continue baking for a further 15 min then grill briefly till the chicken is golden.
  12. Serve with salad or possibly extra green vegetables.
