Sausage Spoon Bread Recipe

  1. Brown sausage in skillet; remove with slotted spoon.
  2. In drippings, cook onion and celery till wilted.
  3. Scald 1 1/2 c. lowfat milk.
  4. Mix remaining 1 c. lowfat milk with cornmeal; gradually stir into scalded lowfat milk.
  5. Cook, stirring often, till thick, about 5 min.
  6. Off heat stir in the butter, salt, egg yolks and sausage mix.
  7. Beat egg whites till stiff and mix in.
  8. Turn into buttered shallow 1 1/2 qt baking dish, mounding in center.
  9. Bake at 375 degrees for 40-50 min.
  10. Serve at once.
