Sausage Spoon Bread Recipe
- 1/2 pound pork sausage
- 1/4 c. minced onion
- 1 c. finely minced celery
- 2 1/2 c. lowfat milk
- 1 c. white cornmeal
- 2 tbsp. butter
- 1 teaspoon salt
- 3 Large eggs, separated
- Brown sausage in skillet; remove with slotted spoon.
- In drippings, cook onion and celery till wilted.
- Scald 1 1/2 c. lowfat milk.
- Mix remaining 1 c. lowfat milk with cornmeal; gradually stir into scalded lowfat milk.
- Cook, stirring often, till thick, about 5 min.
- Off heat stir in the butter, salt, egg yolks and sausage mix.
- Beat egg whites till stiff and mix in.
- Turn into buttered shallow 1 1/2 qt baking dish, mounding in center.
- Bake at 375 degrees for 40-50 min.
- Serve at once.
