Lemon Poppy Seed Cakes
- 1 (18 ounce) package lemon cake mix
- 1 (4 ounce) package instant lemon pudding
- 1 cup water
- 12 cup vegetable oil
- 4 eggs
- 12 cup chopped pecans
- 1 tablespoon poppy seed
- 2 tablespoons sugar
- 12 cup lemon juice
- Grease loaf pans, 2 large or 4 small.
- Combine the first 5 ingredients, beat at medium speed with an electric mixer until blended.
- Stir in pecans and poppy seeds.
- Put in loaf pans.
- Bake at 325F for 40 minutes.
- Mix together 1/2 cup lemon juice and 2 tablespoons sugar until sugar is dissolved.
- While loaves are hot, pour lemon/sugar combination over each one equally.
- Cool in pans for at least 10 minutes.
