Mexican Rice Recipe

  1. Cook and stir pepper and onion in warm oil in saucepan till tender but not browned.
  2. Add in corn, salsa and broth; bring to a boil.
  3. Stir in rice; cover.
  4. Remove from heat.
  5. Let stand 5 min.
  6. Add in cheese; fluff with fork.
