Stuffed Date Drops From the '50's
- 1 pound dates (about 70), pitted
- 70 Pecan pecan halves (about 3 oz.)
- 1/4 cup vegetable shortening
- 3/4 cup brown sugar
- 1 each eggs
- 1 1/4 cups flour, all-purpose
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream dairy
- 1/2 cup margarine or butter
- 3 cups powdered sugar sifted
- 3/4 teaspoon vanilla extract
- 3 tablespoons water
- Stuff dates with nut halves.
- Thoroughly cream shortening and sugar.
- Beat in egg.
- Sift dry ingredients together.
- Add alternately with sour cream to creamed mixture.
- Stir in dates, gently.
- Drop onto greased cookie sheets (1 date per cookie).
- Bake at 400F (200C) for 8 to 10 minutes.
- Golden Frosting:
- Lightly brown butter.
- Remove from heat and gradually beat in sugar and vanilla.
- Slowly add water until of spreading consistency.
- Makes about 70 cookies.
