Seafood Chowder
- 3 Tbsp. butter or margarine
- 1 large onion, chopped
- 3 stalks celery, chopped
- 3 potatoes, peeled and chopped
- 1 (8 oz.) can tomato sauce
- 1 (14 1/2 oz.) can whole tomatoes
- 1 (10 1/2 oz.) can chicken broth
- 1 bay leaf
- 1 tsp. dried basil
- 1 tsp. garlic powder
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 lb. frozen cod, haddock or sole fillets, cut into 1-inch cubes
- In a large pot, saute onion, celery and potatoes in butter over low heat until onion is softened.
- Add remaining ingredients, except fish.
- Cover and simmer for 20 minutes.
- Add fish and simmer for 15 minutes more.
- Be sure to remove bay leaf before serving.
- Yield:
- About 2 quarts or 8 to 12 servings.
