Mr. Mike's Crawfish Cornbread

  1. Preheat oven to 350F.
  2. In a medium size skillet over medium heat, melt the butter and saute the onion, bell pepper, and jalapeno until the onions are translucent.
  3. Set aside to cool.
  4. Mix together the cornbread mix, eggs, corn, and creamed corn in a large bowl.
  5. Stir in the chopped crawfish tails and cheddar cheese.
  6. Mix well to combine.
  7. Stir in the sauteed vegetables and stir to combine.
  8. Spread the cornbread out in a greased 9x13 baking dish and bake in the oven for 45-55 minutes.
  9. Allow to cool for 10-15 minutes
