No Eggs! No Milk! Chocolate Pudding

  1. Soak the gelatin in 50ml water.
  2. Heat 50ml soy milk in a saucepan, and just before it comes to a boil, add the cocoa powder and mix well with a whisk.
  3. Top up the mixture with another 150ml of soy milk, and turn off the heat just before it reaches a boil.
  4. Add the sugar and gelatin and mix it all together well.
  5. Mix in the last 200ml soy milk, and pour the mixture into ramekins.
  6. Once the residual heat has dissipated, chill in the fridge, and once they've cooled and hardened, they're done.
  7. You can also try a soy milk pudding.
