Tomato Basil Soup

  1. In a saucepan saute onion in oil.
  2. Add tomatoes and juice, broth, marinara sauce, salt and pepper.
  3. Simmer, stirring occasionally about 10 minutes.
  4. Let cool slightly.
  5. Stir in 1/2 of the basil.
  6. Transfer soup to food processor or blender and puree.
  7. Return to saucepan and adjust seasonings.
  8. Turn heat to low.
  9. Chiffonade the remaining basil leaves.
  10. Serve soup hot, topped with basil and pine nuts.
