Cranberry Cheese Roll
- 1 (8 ounce) package cream cheese, at room temperature
- 13 cup craisins, very coarsely chopped (sweetened dried cranberries)
- 1 cup walnuts or 1 cup pecans, chopped and toasted
- assorted cracker
- Add the craisins to the cream cheese and mix to combine.
- Hands are the best mixers for this job.
- Place mixture on waxed paper and shape into a roll.
- Roll this in the chopped and toasted nuts.
- Wrap and chill 4 hours or longer.
- To serve: Unwrap roll and place on an attractive platter.
- It is well to do this about 15 minutes before serving to allow the roll to soften slightly.
- Surround with favorite crackers.
