Indian Cauliflower Pasta
- Equal amounts of cooked cauliflower chunks and cooked pasta (a chunky shape, like fusilli, radiatore, or medium shells, is best)
- Smooth or chunky peanut butter, thinned with vegetable or chicken broth to a gravy consistency
- 1/8 teaspoon cayenne pepper
- 1 teaspoon garam masala (an Indian spice blend you can buy ready-made or make yourself)
- Combine all the ingredients in a baking dish and warm in a 350F oven for 30 minutes.
- This works equally well with broccoli.
