Bonito and egg breakfast
- 3 large eggs
- 4 1/2 grams bonito flakes
- 1 pints chicken broth
- 1 large shallot
- 1/4 tsp granulated garlic powder
- 1/4 tsp white pepper
- 1/4 tsp cilantro
- 2/3 stick butter
- Put broth in a pot, bring to a boil.
- Add butter, bonito flakes, shallots, garlic, and pepper.
- Let boil
- Beat one egg, stir the broth add the egg.
- When the broth is no longer spinning, but boiling add the two eggs, to poach them.
- It will be fast.
- Take eggs out one at a time gently and add gently to a bowl.
- Dip your soup not directly over egg as not to break the yoke.
- Top with cilantro serve immediately, for the yoke will finish cooking.
- You want the yoke runny.
