Pasta with Dino's Marinara Sauce

  1. Heat oil in heavy large skillet over medium heat.
  2. Add onion; saute until tender, about 10 minutes.
  3. Add garlic; saute 1 minute.
  4. Add mushrooms and crushed red pepper; saute until mushrooms just begins to soften, about 5 minutes.
  5. Add tomatoes and reserved juices.
  6. Cover and simmer 15 minutes.
  7. Add tomato sauce, sugar, basil and oregano.
  8. Cover and cook 15 minutes.
  9. Uncover and simmer until slightly thickened, about 5 minutes.
  10. Season with salt and pepper.
  11. Add tortellini and 2 tablespoons parsley to sauce.
  12. Transfer to large bowl.
  13. Garnish with remaining parsley.
  14. Serve, passing Parmesan separately.
