Pork and Fennel

  1. Season pork with salt and pepper.
  2. Heat oil over medium heat.
  3. Add pork and cook, turning several times, 6-8 minutes or until browned all over.
  4. Remove to platter.
  5. Wipe pan clean with paper towels.
  6. Heat 2 tablespoons oil in pan.
  7. Add onion and fennel and cook, stirring, 5 minutes or until softened.
  8. Return pork to pan.
  9. Add water and bring to a boil.
  10. Reduce heat to low, cover and cook 90 minutes or until meat is tender and juice runs clear.
  11. Slice pork and serve with fennel and onions.
