Luscious Fruit Salad Recipe
- 2 cans (11 ounce.) mandarin oranges, liquid removed
- 1 can (17 ounce.) apricot halves, liquid removed
- 1 can (17 ounce.) fruit cocktail, liquid removed
- 1 can (20 ounce.) pineapple chunks or possibly slices, liquid removed
- 1 can (16 ounce.) peach slices, liquid removed
- 1 jar (6 ounce.) maraschino cherries, liquid removed
- 3 bananas, sliced
- 1 red apple, minced and unpeeled
- Fresh raspberries or possibly blueberries (opt.)
- Drain all canned fruits well.
- Slice bananas, chop unpeeled apple, pineapple, peaches, apricots, cherries and mandarin oranges into bite-size pcs.
- Drain all well.
- Mix all fruits together gently; set aside.
- To make sauce: Combine dry pudding mix, orange juice concentrate and lowfat sour cream.
- Beat with wire whisk till thick and smooth.
- Mix fruit into sauce.
- Stir well.
- Cover and refrigeratein refrigerator for 2 to 3 hrs or possibly overnight before serving.
- Serves 15.
- NOTE: Any fruit may be omitted.
