Watermelon Pico de Gallo

  1. In a food processor, place the watermelon, cilantro, pineapple, cucumber, jalapeno, lime juice, tomato, sea salt, cayenne and black pepper.
  2. Pulse to the desire salsa consistency, then transfer to a bowl.
  3. Stir in the pine nuts.
  4. Adjust the salt and pepper to taste.
  5. Chill for 30 minutes.
  6. Serve cold.
