Salmon Patties

  1. Empty 1 can salmon with juice into a large bowl and remove bones.
  2. Add 2 eggs.
  3. Add lemon juice.
  4. Stir well.
  5. Add onion, pepper, crackers.
  6. Stir.
  7. Form into 5 - 6 patties 3/4 to 1" thick.
  8. Set aside.
  9. Let set 5 minutes.
  10. In large frying pan heat 1/2 inch cooking oilto medium high temperature When oil is hot, place patties in pan and cook 4 - 5 minutes per side.
  11. Make sure they cook all the way through.
  12. Serve with more lemon juice.
