English Toffee

  1. Butter the sides of a heavy saucepan.
  2. Melt butter.
  3. Add sugar, water, and corn syrup.
  4. Cook over medium-high heat, stirring frequently.
  5. Cuuk until 290F (soft crack stage).
  6. Watch carefully after 280F and remove from heat immediately at 290F.
  7. Turn onto greased aluminum foil and spread out with wooden spoon.
  8. Wait for 2-3 minutes until surface is firm.
  9. Sprinkle with chocolate pieces.
  10. Spread chocolate when melted.
  11. Sprinkle with chopped nuts.
  12. Chill until chocolate is firm and then break candy into pieces.
