Banana Brownies
- 1 c. all-purpose flour
- 1 c. light brown sugar, firmly packed
- 1/3 c. margarine
- 1 1/2 tsp. baking powder
- 1 egg, lightly beaten
- 1 c. coarsely mashed bananas
- 1 (6 oz.) pkg. semi-sweet chocolate pieces
- 2 tsp. grated lemon rind
- milk if needed
- Preheat oven to 350u0b0.
- Grease an 8-inch square baking pan. In a large bowl with a mixer set at low speed, blend flour, sugar and margarine until mixture resembles coarse corn meal.
- Blend in baking powder.
- Stir in egg and bananas.
- Gently fold in chocolate pieces and lemon rind.
- Add a little milk if batter is stiff. Spread mixture in baking pan.
- Bake 25 to 30 minutes or until cake tester or wooden toothpick inserted in center comes out clean.
- Cool.
- Cut into 1 1/2-inch pieces.
