Marvelous Masala Recipe mbounds

  1. Heat a large, heavy saucepan over medium-low heat.
  2. Add the oil, and then sweat the onions for several minutes.
  3. Add the grated ginger and stir until fragrant, about 30 seconds.
  4. When the onions are almost translucent, add the can of tomato paste.
  5. Stir continuously until the paste has darkened in color, about 4 minutes.
  6. Add the spices and salt; stir to incorporate.
  7. Slowly incorporate the stock into the tomato-onion mixture, until the mix is smooth.
  8. Add the kale, stir, and cover.
  9. Simmer for about 5 minutes, until the kale has wilted.
  10. Carefully fold in the chickpeas.
  11. Simmer for an additional 5-10 minutes.
  12. Serve with basmati rice.
