Marvelous Masala Recipe mbounds
- 1 tsp olive oil or butter
- 2 medium onions, slivered (mandoline is very useful here)
- 1 tbsp grated fresh ginger
- 1 small can tomato paste
- 2 tbsp garam masala
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground red pepper
- 1/2 tsp salt
- 2 c. chicken or vegetable stock
- Large can of chickpeas, drained and rinsed
- 2 c. chopped kale or 1 1/4 c. frozen chopped spinach
- Heat a large, heavy saucepan over medium-low heat.
- Add the oil, and then sweat the onions for several minutes.
- Add the grated ginger and stir until fragrant, about 30 seconds.
- When the onions are almost translucent, add the can of tomato paste.
- Stir continuously until the paste has darkened in color, about 4 minutes.
- Add the spices and salt; stir to incorporate.
- Slowly incorporate the stock into the tomato-onion mixture, until the mix is smooth.
- Add the kale, stir, and cover.
- Simmer for about 5 minutes, until the kale has wilted.
- Carefully fold in the chickpeas.
- Simmer for an additional 5-10 minutes.
- Serve with basmati rice.
