Grilled Belgian Endive and Blue Cheese Gratinee

  1. Prepare barbecue (medium-high heat) and preheat broiler.
  2. Place endive in single layer on baking sheet.
  3. Brush endive with 4 tablespoons oil.
  4. Sprinkle with salt and pepper.
  5. Grill until crisp-tender, about 1 minute per side.
  6. Return to baking sheet.
  7. Sprinkle with cheese.
  8. Broil until cheese melts and bubbles, about 2 minutes.
  9. Transfer to platter.
  10. Drizzle with 1/2 tablespoon oil and vinegar.
  11. Top with parsley.
