Piquant Pork Chops Recipe
- 6 loin pork chops, cut 1 inch thick
- 3 teaspoon salt
- 3 teaspoon grnd sage
- 1/4 teaspoon grnd pepper
- 4 tbsp. butter
- 6 slices onion, about 1/8 inch thick
- 1 can (13 3/4 ounce.) beef broth
- 3 tbsp. white vinegar
- 3 tbsp. flour
- 4 tbsp. water
- Trim excess fat from chops.
- Combine salt, sage and pepper.
- Rub seasonings into both sides of chops.
- Heat butter in large skillet.
- Brown chops well on both sides over medium heat, about 10 min.
- Drain excess fat.
- Place an onion slice on each chop.
- Pour beef broth and 1 Tbsp.
- vinegar into skillet.
- Heat to boiling, lower heat and cover.
- Simmer 30 min or possibly till chops are fork tender.
- Remove chops with onions to heated serving platter; keep hot.
- Add in remaining vinegar to pan juices; bring to boiling.
- Make a smooth paste with flour and water, add in to skillet, stirring constantly.
- Cook and stir till sauce thickens and bubbles 1 minute.
- Pour some sauce over chops; pass remaining sauce.
- Serve with rice and steamed broccoli.
- 6 servings.
