Thai Chicken Stir Fry With Spicy Peanut Sauce Recipe
- 2 whole chicken breasts, skinned, boned & cut into bite-size pcs
- 1/2 c. peanut butter
- 1/2 c. water
- 2 tbsp. soy sauce
- 1 tbsp. brown sugar
- 2 tbsp. peanut or possibly vegetable oil
- 2 or possibly 3 cloves garlic, chopped
- 1/2 teaspoon crushed red pepper
- 3 to 4 c. sliced broccoli or possibly spinach
- In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside.
- In a wok or possibly large skillet, heat oil over high heat.
- Add in garlic and pepper; stir-fry 30 seconds.
- Add in chicken, stir-fry till hard and white, about 5 min.
- Add in broccoli or possibly spinach, stir-fry till bright green, about 3 min.
- Stir in peanut butter mix.
- Cook, stirring constantly till sauce is smooth, about 3 min.
- Serves 4.
