Black Jack Barbecue Sauce With Short Ribs
- 1 cup strong black coffee
- 1 cup Worcestershire sauce
- 1 cup ketchup
- 1/2 cup cider vinegar
- 1/2 cup brown sugar
- 3 tbsp. chili powder
- 2 tsp. salt
- 2 cups chopped onion
- 6 cloves garlic, minced
- 5 lb. beef short ribs

- In a large saucepan, combine coffee, Worcestershire sauce, ketchup, vinegar, sugar, chili powder, salt, onion, and garlic.
- Simmer for 25 minutes.
- Transfer mixture to a blender or food processor and puree.
- You will have about 5 cups of sauce.
- Place ribs in a large flat pan.
- Pour 3 cups of the sauce over the ribs, turning ribs to coat with sauce.
- Pierce meat with a large fork.
- Marinate for 8 hours, turning once.
- Remove ribs from marinade and brush off excess liquid.
- Bake ribs in a 350F oven for 1 hour and 30 minutes.
- Heat remaining 2 cups of sauce and serve on the side.
- Marinade can be stored in the refrigerator.
- Serves 6.
