Pineapple-Cottage Cheese Treat
- 3/4 cup boiling water
- 1 pkg. (0.3 oz.) JELL-O Orange Flavor Sugar Free Gelatin
- ice cubes
- 1/2 cup cold water
- 1 cup thawed COOL WHIP Sugar Free Whipped Topping
- 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 can (8 oz.) pineapple chunks in juice, drained
- Add boiling water to gelatin mix in medium bowl; stir 2 min.
- until completely dissolved.
- Add enough ice cubes to cold water to make 1-1/4 cups.
- Add to gelatin; stir until slightly thickened.
- Remove any unmelted ice.
- Mix COOL WHIP and cottage cheese until well blended; spoon into 8 dessert dishes.
- Top with pineapple and gelatin.
- Refrigerate 2 hours or until gelatin is set.
