My Favourite Lemon Cheesecake
- 1 cup flour
- 14 sugar
- 8 tablespoons unsalted butter, room temperature
- 16 ounces cream cheese, room temperature
- 12 cup sugar
- 3 -4 tablespoons grated lemon zest
- 1 cup yogurt
- 10 tablespoons fresh lemon juice
- 3 large eggs, room temperature
- Preheat oven to 350*F.
- In a bowl mix by hand first 3 ingredients fir the base.
- Pat the dough gently over the bottom of an 8" pan and about 1" up the sides.
- Bake the base on the center oven rack until golden, about 25 minutes.
- Meanwhile prepare the topping.
- Using a blender (you can also use electric mixer ) on medium speed mix ingredients in following order.
- : eggs, sugar,yogurt, lemon juice and zest, cream cheese till light and fluffy.
- You may have to stop the blender/ mixer once or twice to scrape the bowl with a rubber spatula.
- Spread the topping evenly over the base.
- Bake on the center oven rack for about 1 hour,or until the center of the dish is set.
- Chill in the fridge for several hours or over night.
