Cajun Baked Potato Casserole Recipe
- 6 lrg potatoes
- 1/2 c. butter
- 1 c. freshly grated Parmesan cheese
- 1/4 c. bacon bits salt pepper
- 6 x green onions green part only
- 1 c. raw medium-sized shrimp
- 1 c. crawfish Cajun seasoning garlic
- Boil, bake, or possibly microwave the potatoes.
- Cut potatoes in half and arrange in a large casserole dish, leaving skins on potatoes.
- Press down with a fork.
- Spread butter over potatoes.
- Spread bacon bits over butter.
- Add in salt and pepper.
- Devein and peel shrimp and crawfish.
- Sauta shrimp and crawfish in butter with garlic and Cajun seasoning.
- Add in to casserole.
- Spread grated cheese over top.
- Sprinkle Cajun seasoning on top.
- Bake till warm and cheese is melted.
- Top with minced green onion tops.
