Roasted chicken thighs
- 2 lb bone in chicken thighs
- 2 red onions cut into thick wedges
- 6 roma tomatoes, quartered
- 6 red new potatoes, small size
- 8 whole cloves of garlic
- 3 tsp thyme
- 1/2 tbsp salt
- 1 tsp pepper
- 1/2 tsp tarragon
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- Heat oven to 375F.
- In a large bowl combine all ingredients together except tomatoes.
- Transfer to large roasting pan.
- Cook covered for 20 minutes.
- Then uncover , raise temperature to 400F, add tomatoes and cook additional 25 minutes or until internal temperature reaches 180F.
