Homemade Summer Sausage Recipe

  1. Combine all ingredients in large bowl.
  2. Mix with hands till well combined.
  3. Cover tightly and chill 24 hrs.
  4. Divide meat mix into thirds; form each into a smooth roll about 12 inches long.
  5. Arrange the 3 rolls on microwave- safe meat rack.
  6. Cover with paper towels.
  7. Microwave (low - 30%) 20 min.
  8. Rearrange and turn rolls.
  9. Microwave (low - 30%) 20 to 25 min or possibly till meat is set (140 degrees).
  10. Cold.
  11. Wrap tightly and chill or possibly freeze.
  12. Cut into 1/4-inch slices for serving.
  13. With full power, microwave 5 min and let stand 10 min.
  14. Turn and rearrange sausages.
  15. Repeat twice (15 min total microwave time.)
