Homemade Summer Sausage Recipe
- 3 pound lean grnd beef
- 1 1/2 teaspoon peppercorns, crushed
- 1 1/2 teaspoon mustard seed
- 1 1/2 teaspoon garlic salt
- 3 teaspoon tender-quick curing salt
- 1 1/2 teaspoon liquid smoke
- Combine all ingredients in large bowl.
- Mix with hands till well combined.
- Cover tightly and chill 24 hrs.
- Divide meat mix into thirds; form each into a smooth roll about 12 inches long.
- Arrange the 3 rolls on microwave- safe meat rack.
- Cover with paper towels.
- Microwave (low - 30%) 20 min.
- Rearrange and turn rolls.
- Microwave (low - 30%) 20 to 25 min or possibly till meat is set (140 degrees).
- Cold.
- Wrap tightly and chill or possibly freeze.
- Cut into 1/4-inch slices for serving.
- With full power, microwave 5 min and let stand 10 min.
- Turn and rearrange sausages.
- Repeat twice (15 min total microwave time.)
