Grandmother's Lemon Meringue Pie Recipe
- 1 1/4 c. sugar
- 6 tbsp. cornstarch (try 4)
- 1/2 teaspoon salt
- 2 c. lowfat milk
- 3 egg yolks
- 1/2 c. lemon juice
- 1 teaspoon grated rind
- 2 tbsp. butter
- 9" baked pie shell
- Combine sugar, cornstarch and salt.
- Add in lowfat milk gradually.
- Cook over direct heat till thick and clear, about 5 min.
- Add in beaten egg yolks and cook 6 min longer.
- Remove from heat.
- Add in juice; rind and butter.
- Cold.
- Pour in shell and top with meringue.
- Bake in 400 degree oven up to 10 min.
