Apple Cinnamon Coffee Ring Recipe
- 1 pkt dry yeast
- 1/4 c. hot water
- 1 c. lowfat milk
- 1/3 c. sugar
- 1/3 c. butter
- 1/2 tsp salt
- 2 x Large eggs
- 4 1/2 c. all-purpose flour - (to 5)
- 1 c. minced tart green apple
- 1/4 c. butter melted, divided
- 1/2 c. brown sugar
- 1 tsp cinnamon
- 1 tsp grated orange peel
- 1 tsp vanilla
- 1/2 c. minced pecans
- 3/4 c. powdered sugar
- 1 Tbsp. orange juice
- Dissolve yeast in water.
- Set aside till foamy.
- Meanwhile, heat lowfat milk, sugar, butter and salt in a small saucepan to 110 degrees.
- In a mixing bowl combine the lowfat milk mix, yeast mix and Large eggs; mixing well.
- Add in sufficient flour and stir till a soft dough forms.
- Turn out onto a floured surface and knead dough 5 min or possibly till elastic.
- Oil a large bowl, place dough in bowl, turn to coat all sides; cover and let rise in a hot place about 1 hour.
- Saute/fry apples in 2 Tbsp.
- butter till soft.
- Remove from heat and add in brown sugar, cinnamon, orange peel and pecans.
- Mix well and set aside.
- Once dough has risen, roll out on floured surface to an 11- by 9-inch rectangle.
- Brush with remaining 2 Tbsp.
- melted butter and top with apple mix, leaving 1/2-inch border at edges.
- Fold dough in thirds lengthwise to make 11- by 3-inch roll.
- Cut crosswise into 12 equal pcs.
- Arrange pcs, cut-side up, in greased 9-inch springform pan forming a ring.
- Cover and let rise 40 min.
- Preheat oven to 350 degrees.
- Bake for 30 to 35 min or possibly till golden.
- Cold on wire rack.
- Remove from pan and place on a serving plate.
- Combine glaze ingredients and drizzle over the ring and serve.
- This recipe yields 8 to 10 servings.
