Rotkohl (Sweet and Sour Braised Cabbage)

  1. Cook bacon in a large Dutch oven over medium-high heat until crisp.
  2. Remove bacon from pan, reserving 1 tbsp drippings in pan.
  3. Set bacon aside.
  4. Add onions to drippings in pan and saute 3 minutes.
  5. Add apple to pan, saute 2 minutes.
  6. Add cabbage to pan and saute 2 minutes.
  7. Add cider and remaining ingredients to pan and bring to a boil.
  8. Cover and reduce heat.
  9. Simmer for 1 1/2 hours or until cabbage is tender, stirring occasionally.
  10. Discard cloves and bay leaf.
  11. Sprinkle with bacon and serve.
