Pork Chop Stuffing Bake Recipe
- 6 pork chops, cut 3/4 inch thick
- 3 tbsp. butter
- 1 c. minced celery
- 3 c. herb seasoned stuffing mix
- 1 slightly beaten egg
- 1 (17 ounce.) can cream style corn
- 1 (10 ounce.) pkg. frzn mixed vegetables
- Paprika
- Trim fat from chops.
- In skillet cook trimmings till about 1 Tbsp.
- fat accumulates; throw away trimmings.
- Brown the chops in warm fat; season with salt and pepper.
- Remove chops from pan.
- Add in butter to drippings in skillet.
- Add in celery and onion; cook till tender but not brown.
- Remove skillet from heat; add in stuffing mix tossing to coat.
- Combine egg and corn; blend with stuffing.
- Spoon mix in 12 x 7 1/2 x 2 inch baking dish.
- Cook vegetables in boiling salted water 5 min; drain.
- Sprinkle over stuffing mix.
- Top with browned chops.
- Bake covered in 350 degree oven for 55 min.
- Sprinkle the pork chops with paprika, optional.
- Makes 6 servings.
