Chicken With Rice
- 1 lb boneless chicken breast, cut into cubes
- 12 cup red bell pepper, diced
- 1 small onion, diced
- 2 tablespoons olive oil
- 14 ounces diced tomatoes, drained
- 1 cup frozen peas
- 2 garlic cloves, minced
- 1 (5 ounce) package yellow rice mix (such as Carolina)
- Cook the rice according to the directions on the package.
- While the rice is cooking, in a large skillet heat the oil over medium high heat.
- Saute the pepper and onions until softened.
- Add the chicken and cook, stirring until browned.
- Add the tomatoes, peas, and garlic.
- Simmer until everything is heated through and the chicken is cooked.
- Add the cooked rice to the fry pan, mix well and serve.
