Broccoli, Pepper and Rice Skillet With Soy Sausage

  1. Warm olive oil in a large skillet over medium heat.
  2. Add broccoli and peppers and cook about 3 minutes.
  3. Crumble sausage into pan; add garlic, oregano and crushed peppers, and cook another 2-3 minutes.
  4. Add rice and cook until heated through.
  5. Add salt and pepper to taste and stir in gorgonzola just before serving.
